A colourful vegetarian pizza loaded with roasted peppers, courgette, red onion, and creamy mozzarella.

Ingredients
- 1 ball pizza dough (about 250 g)
- 100 ml pizza sauce
- 125 g mozzarella, torn or grated
- ½ red pepper, thinly sliced
- ½ small courgette, thinly sliced
- ½ small red onion, thinly sliced
- 1 tablespoon olive oil
- ½ teaspoon dried oregano
- Salt and black pepper
- A handful of rocket leaves, optional
Method
- Heat the oven to 230°C. Toss the pepper, courgette, and onion with half the olive oil, salt, and pepper.
- Roast the vegetables for 8–10 minutes, until just tender. Increase the oven to its highest setting.
- Stretch the dough into a thin round on a lightly floured surface.
- Spread over the pizza sauce and add the mozzarella.
- Arrange the roasted vegetables on top and sprinkle with oregano.
- Bake on a preheated tray or pizza stone for 10–12 minutes, until the crust is golden.
- Top with rocket and the remaining olive oil before serving, if desired.
Recipe tip
Roasting the vegetables first removes excess moisture and gives them a sweeter, more concentrated flavour.
