  • Classic Margherita Pizza

    A simple Italian classic with a crisp crust, bright tomato sauce, creamy mozzarella, and fresh basil.

    Ingredients

    • 1 ball pizza dough (about 250 g)
    • 120 ml crushed tomatoes
    • 1 tablespoon olive oil
    • 1 small garlic clove, finely grated
    • 125 g fresh mozzarella, torn into pieces
    • A handful of fresh basil leaves
    • Salt and black pepper
    • Semolina or flour for dusting

    Method

    1. Heat the oven to its highest setting, ideally 250°C, with a baking tray or pizza stone inside.
    2. Mix the crushed tomatoes with the olive oil, garlic, a pinch of salt, and black pepper.
    3. Stretch the dough into a thin round on a lightly floured surface.
    4. Spread the tomato sauce over the dough, leaving a narrow border around the edge.
    5. Add the mozzarella and transfer the pizza to the hot tray or stone.
    6. Bake for 10–12 minutes, until the crust is golden and the cheese is bubbling.
    7. Finish with fresh basil and a drizzle of olive oil before serving.

    Recipe tip

    Drain fresh mozzarella well before using it to keep the centre of the pizza crisp.

    A crowd-pleasing pizza topped with rich tomato sauce, melted mozzarella, and crisp-edged pepperoni.

    • 150 g grated mozzarella
    • 60 g sliced pepperoni
    • 1 tablespoon grated Parmesan
    • ½ teaspoon dried oregano
    • 1 teaspoon olive oil
    • Semolina or flour for dusting

    Method

    1. Heat the oven to its highest setting, ideally 250°C, with a baking tray or pizza stone inside.
    2. Stretch the dough into a thin round on a lightly floured surface.
    3. Spread the pizza sauce over the dough, leaving the edge uncovered.
    4. Sprinkle over the mozzarella, then arrange the pepperoni slices evenly on top.
    5. Finish with Parmesan and dried oregano.
    6. Bake for 10–12 minutes, until the crust is browned and the pepperoni edges are crisp.
    7. Drizzle lightly with olive oil, slice, and serve hot.

    Recipe tip

    For extra heat, add a pinch of chilli flakes before baking or serve with chilli oil.

    A colourful vegetarian pizza loaded with roasted peppers, courgette, red onion, and creamy mozzarella.

    Ingredients

    • 1 ball pizza dough (about 250 g)
    • 100 ml pizza sauce
    • 125 g mozzarella, torn or grated
    • ½ red pepper, thinly sliced
    • ½ small courgette, thinly sliced
    • ½ small red onion, thinly sliced
    • 1 tablespoon olive oil
    • ½ teaspoon dried oregano
    • Salt and black pepper
    • A handful of rocket leaves, optional

    Method

    1. Heat the oven to 230°C. Toss the pepper, courgette, and onion with half the olive oil, salt, and pepper.
    2. Roast the vegetables for 8–10 minutes, until just tender. Increase the oven to its highest setting.
    3. Stretch the dough into a thin round on a lightly floured surface.
    4. Spread over the pizza sauce and add the mozzarella.
    5. Arrange the roasted vegetables on top and sprinkle with oregano.
    6. Bake on a preheated tray or pizza stone for 10–12 minutes, until the crust is golden.
    7. Top with rocket and the remaining olive oil before serving, if desired.

    Recipe tip

    Roasting the vegetables first removes excess moisture and gives them a sweeter, more concentrated flavour.
